I have toyed with an idea that I think would fit into your business and would like to share it with you for your consideration.
The idea is Sweet Pizzas, I feel this is a niche that has not been investigated, my ideas are as follows:
Cold
Based on a brioche (or similar) topped with fresh/sugared/candied fruits and supplemented with spread on/drizzle/pour/dip sauces such as
fruit syrups/cream/custard/chocolate/toffee even ice-cream.
Cold/Warm
Based on a sweet version of thin and crispy various crumbles, a thin layer of rhubarb/apple/red fruits with a crumble topping, again supplemented with cream/custard/ice cream.
I feel that the delivery methods already in place in both restaurant and take away can be reused.
Also, carrying the idea on, you could offer the Three Course Meal to go or in house, you get a slice of Garlic pizza, Main pizza and Sweet pizza. For take away this would be served in a half pizza box the Meal for 2 being 2 slices of each in a full pizza box.
